Key Lime Pie
Key Lime Pie
Serves 6 to 8

For this recipe, you will need:

Crust
  • 2 cups, plus 2 tablespoons graham cracker crumbs
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted

    Filling
  • One 14-ounce can sweetened condensed milk
  • 1/2 cup key lime juice, fresh or bottled
  • 5 large egg yolks

    Sour Cream Sauce
  • 1 cup dairy sour cream
  • 1/2 cup granulated sugar
  • 2 tablespoons lime juice

    Decorations
  • 1/4 cup heavy cream
  • 1 tablespoon granulated sugar
  • 3 limes
  • 2 ounces shaved dark chocolate

    Directions:
    1. Preheat an oven to 375 degrees F.

    2. To make the crust: In a medium bow, stir together the graham cracker crumbs with the 1/2 cup sugar and melted butter. Press the crumb mixture into the bottom and sides of an 8-inch pie pan. Bake the crust for 10 minutes in the preheated oven.

    3. To make the filling: In a medium bowl, whisk together the condensed milk, lime juice, and egg yolks just until smooth. Do not over-mix or incorporate much air.

    4. Pour the filling into the baked pie crust and bake until firm, 20 to 25 minutes.

    5. Transfer the pie from the oven to a wire rack and cool for 30 to 45 minutes.

    6. To make the sour cream sauce: In a small mixing bowl, stir together the sour cream, sugar, and lime juice. Set aside.

    7. To decorate the pie: In a small mixing bowl, whip the cream with the 1 tablespoon sugar to soft peaks. Set aside.

    8. Slice 2 of the limes into very thin slices. Zest the remaining lime. Decorate the pie with the whipped cream, lime slices, lime zest, and chocolate curls. Cut the pie into wedges and serve with the reserved sour cream sauce.
